Salt and Pepper Chicken Stir Fry

Ingredients

Serves 1

  • 120g skinless chicken breast, sliced into thin strips
  • 1 pinch Chinese five spice
  • 1 pinch ground white pepper
  • 2 tsp olive oil
  • 2 spring onions, cut into 3cm pieces
  • 1 red chilli, sliced
  • 1/2 red or orange pepper, deseeded and cut into chunks
  • Salt and pepper
  • 60g baby sweetcorn, halved lengthways
  • 10g pumpkin seeds
  • 60g edamame or soya beans

Method

Heat a frying pan over a medium to high heat. Mix the chicken with the five spice, white pepper and half of the olive oil before adding to the pan. Cook until the chicken is white all the way through and starting to crisp up.

Push the chicken to one side of the pan then add the rest of the oil. Fry all of the remaining ingredients until the vegetables are just tender.

Mix everything together, season to taste and serve.
