BLT Pesto Orzo Bowl

Total time: 45 minutes
Preheat the oven to 200ºC. Pierce the potato all over with a fork then microwave on high power for 10-12 minutes until soft. Leave to cool slightly then halve lengthways and scoop the flesh into a bowl. Lay the two potato skins on a baking tray and bake for 10 minutes.
Meanwhile roughly mash the potato then add the ham, spring onion, cheese, egg and smoked paprika. Season with salt and pepper and stir to combine.
Spoon the filling into the potato skins then return to the oven for 15 minutes until golden and crisp. Serve with a simple green salad.
