Chicken Milanese with Pasta

Ingredients

Serves 1

  • 120g skinless chicken breast
  • 1 1/2 tsp plain flour
  • 1 egg white
  • 15g panko of fine white breadcrumbs
  • Salt and pepper
  • 1 1/2 tsp olive oil
  • 50g dried spaghetti
  • 130g passata with garlic and herbs
  • 15g parmesan or hard cheese, finely grated

Method

Flatten the chicken between two pieces of baking paper. Dust it with the flour before dipping in the egg white. Season the breadcrumbs with salt and pepper then press onto the chicken to cover it.

Heat the oil in a frying pan over a medium to high heat. Cook the chicken for 4-5 minutes on each side or until golden, crispy and cooked through.

Cook the spaghetti to pack instructions in a pan of salted water then drain and stir through the passata. Season to taste then slice the chicken and serve on top of the spaghetti. Finish by sprinkling over the parmesan.
