Breakfast Naan Bread

Ingredients

Serves 1

  • 1 tsp olive oil
  • 70g bacon
  • 1 egg
  • 40g quark
  • 1 small bunch coriander
  • 1 pinch salt
  • 1 large naan bread
  • 15g sweet chilli sauce

Method

Heat the oil in a non-stick frying pan over a medium to high heat and cook the bacon for a few minutes on each side until crispy. Move the bacon to one side of the pan and fry the egg for a few minutes until the whites are set and the yolk is still runny, or until cooked to your liking.

Meanwhile blend the quark and coriander together with a pinch of salt until smooth. Heat the naan in the microwave for a few seconds until soft then spread with the quark mix and fill with the bacon and fried egg.

Drizzle over the chilli sauce and scatter over a few extra coriander leaves before tucking in.
