Beef and Halloumi One Pot Bake

Ingredients

Serves 3

  • 3 tsp olive oil
  • 1 white onion, peeled and diced
  • 2 garlic cloves, peeled and crushed
  • 350g beef mince
  • 600g tinned chopped tomatoes
  • 3 tsp tomato purée
  • 1 tbsp dried mixed herbs
  • 150g frozen spinach
  • 180g halloumi, thickly sliced

Method

Heat the oil in a frying pan over a medium heat. Fry the onion and garlic for a few minutes, before adding in the mince and cooking for a few minutes more until browned.

Stir in the tomatoes, purée, mixed herbs and spinach and leave to cook over a low heat for around 10 minutes, or until the mixture has thickened a little and the spinach has defrosted.

Heat the grill to high. Lay the halloumi over the top of the mince before placing under the grill for a few minutes to turn golden.

Feel free to garnish with chopped parsley if you like!
